Vegan pop-tart cookie recipe


Vegan pop-tart cookies

makes about 16 cookies

For the cookie dough

2 tablespoons of ground flax (or your favorite egg replacer)

6 tablespoons of water

1 cup v. butter of choice (room temp)

2/3 cup sugar 

1/3 cup brown sugar 

1 teaspoon almond extract 

3 cups flour

2 teaspoons baking powder 

For the filling

The options are only as limited as your imagination.

1 teaspoon of your favorite jam or jelly (strawberry, cherry, blueberry are all wonderful)

for cinnamon sugar poptarts- combine

1/2 cup brown sugar 

1 tablespoon flour

1 teaspoon cinnamon

For the icing-

Whisk together two cups of powdered sugar and your favorite plant milk. add the milk one tablespoon at a time until you get the desired consistency. It will be thick enough to coat your whisk.

Directions-

  1. Preheat oven to 350 degrees.

  2. Make you v. eggs by combining the ground flax with water and setting aside for a few minutes to set.

  3. While that sets you can add the room temp v. butter, sugar, brown sugar and almond extract into your mixing bowl. (you can make these by hand if you do not have a mixer, it will just take a little muscle.) Cream the v. butter/sugar mixture.

  4. Add the flax mixture to the creamed v. butter mixture and mix to combine.

  5. Add in flour and baking powder, mix until a dough forms. (your dough will not be wet, but you also do not want it to be so dry that it cracks when you mold it. the perfect consistency is close to play-dough)*

  6. Assemble your cookies, take about 2 tablespoons of dough and form into a ball, push your thumb into the center of the dough ball to create a well. Fill this well with your desired filling and then carefully pinch/roll shut. *

  7. Place balls onto a parchment lined tray and bake for about 12 minutes. (note everyone’s ovens are a little different so keep and eye on them until you know your perfect timing.) You will know they are finished when the tops no longer look wet and the bottoms are lightly golden.

  8. Allow to cool completely before bathing them in the icing. Top with your favorite sprinkles or a dash of cinnamon and if you can wait, let the icing set until hardened.

Keeping these in an airtight container will keep them delicious for days, though we don’t let them stay around that long. :)

*Dough trouble shooting. If your dough is sticky/wet add more flour, If your dough is cracking and dry add a bit more water.

*Filled dough balls can be frozen to make a head of time and bake later.

That nostalgic poptart flavor in a cute little cookie. The cookie portion of this recipe is a little less sweet and a bit dry, it is like a mix between a cookie and a scone and it mimics the pastry flavor of the originals with the addition of the filling and glaze these cookies are an absolute treat.
