Vegan almond sugar cookies

We lovingly refer to these cookies as “snails” in our house. They have been one of our top sellers from our home bakery and we are excited to share the process with you so you can make them anytime you like!

Cookie Ingredients:

1 cup vegan butter

1 cup sugar

2 tablespoons ground flax

6 tablespoons water

1 teaspoon vanilla extract

1/2 teaspoon almond extract

3 cups all purpose flour

2 teaspoons baking powder

Frosting ingredients:

1/2 cup vegan butter

3 cup powdered sugar

1 teaspoon almond extract

1-3 tablespoons plant milk

Food coloring (to your liking)

Directions:

In a small bowl, mix flax and water, set aside.

In your mixing bowl cream together v. butter and sugar until creamy. Add in flax mixture and extracts and mix to combine. Add in flour and baking powder, mix until combined into a dough ball.

Scoop dough into desired size, I typically use 3 tablespoons of dough per cookie. Slightly flatten balls and place in freezer until firm.

Bake in a preheated oven at 350*F for about 14 minutes (depending on size)

When the cookies come out of the oven use the bottom of a measuring cup to create a crater that will hold the frosting swirl.

Combine all frosting ingredients and mix well until fluffy and delicious.

When the cookies are mostly cooled you can add a swirl of frosting and pop the cookies into the fridge to set. We prefer these cookies served cold.
